Sardine / Mackarel and Cheese Bake Recipe

This Sardine or Mackerel and Cheese Bake is a hearty, flavour-packed dish layered with rice, tender fish, fresh vegetables, and a golden cheesy topping.

2 cups Rice cooked
425g Sardines / Mackarel
1 Onion chopped
1 Tomato sliced
Salt & Pepper to Taste
2 Eggs
1 cup Milk
1 tsp Bazil
1/2 cup Cheese grated

Instructions

  1. Preheat your oven to 180°C and prepare a 20 cm ovenproof dish.
  2. Spread 2 cups cooked rice evenly over the bottom of the dish.
  3. Break 425 g sardines or mackerel into large pieces and arrange on top of the rice.
  4. Pour the sauce from the fish evenly over the fish layer.
  5. Add a layer of 1 chopped onion, followed by a layer of 1 sliced tomato.
  6. Season with salt and pepper to taste.
  7. In a bowl, whisk together 2 eggs, 1 cup milk, and 1 tsp basil.
  8. Pour the egg mixture evenly over the fish and rice layers.
  9. Sprinkle 1/2 cup grated cheese over the top.
  10. Bake for 45 minutes, or until set and lightly golden on top.
  11. Serve hot with a fresh salad.
