Curried Eggs Recipe

For busy Moms who haven't got much time to prepare a meal this curried eggs and vegetables is the answer. Quick and nutritious!

Ingredients

  • 3 Eggs hard boiled
  • 1 Onion meduim
  • 1 cup Mixed Vegetables
  • 1 tbls Margarine
  • 1 tsp Curry Powder
  • 2 tsp Sugar
  • 1 tbls Flour
  • 1 tbls Vinegar
  • 1 cup Stock

Instructions

  • Fry onion, add mixed vegetables fry until tender.
  • Mix all dry ingredients and moisten with vinegar. 
  •  Add to vegetable mix and gradually stir in the stock.
  • Simmer for 10 minutes, stirring constantly.
  • Add the boiled eggs to the curry sauce.
  • Serve on a bed of rice. 
  • Garnish with almonds.

Onions

People have been eating onions for tousands of years. They don’t know where the first onions were cultivated. Onions grow wild in some regions. They are easy to grow and will grow in a variety of soils and just about any climate. Onions are used cooked in savoury dishes, they can also be eaten raw in a salad or pickled. Chopped onions give of a chemical substance which will irretate the eyes. There are three common onions. White, brown and red. The red onion is used raw in salad because of its colour and flavour.
