Ingredients

  • 1/2 cup Margarine
  • 1/2 cup Brown Sugar
  • 1/2 cup White Sugar
  • 2 Eggs beaten
  • 1 cup Pie Apples mashed
  • 2 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 1/2 tsp Mixed Spice
  • 1/2 cup Fruit Cake Mix
  • 1/2 cup Walnuts chopped
  • 1 tsp Vanilla Essence

Caramel Icing

  • 2 tbsp Margarine
  • 1 cup Icing Sugar
  • 2 tsp Brown Sugar
  • 1 tsp Warm Water

Instructions

  • Preheat oven to 180°C.
  • Beat margarine and sugar until light. 
  • Add beaten eggs. 
  • Mix. 
  • Stir in apples, cake mix and walnuts.
  • Sift flour, salt, baking powder, baking soda and spices together. 
  • Mix with the eggs mixture. 
  • Put in a prepared ring pan.
  • Bake at 180°C for 20 minutes. 
  • Reduce heat to 160° and bake for another 25 minutes.
  • Leave to cool.

Caramel Icing

  • Heat margarine and sugar over low heat until sugar has melted. 
  • Remove from heat. 
  • Add sifted icing sugar. 
  • Mix.
  • Add a little bit of water to make a icing. 
  • Pour over cold cake. 
  • Decorate with cherries.
