Ingredients
4 tbsp Margarine
30 Marshmallows
36 Jelly Beans
5 cups Rice Crispies
Instructions
- Line 12 muffin pans with paper cases.
- In a large saucepan, melt 4 tbsp margarine over low heat.
- Add 30 marshmallows to the melted margarine and stir until completely melted and smooth.
- Remove the saucepan from the stove and stir in 5 cups rice crispies, mixing well until evenly coated.
- Divide the mixture evenly among the 12 paper cases.
- Using the back of a spoon, make a small indent in the centre of each nest.
- Chill for 1 hour to set completely.
- Remove the paper cases and place 3 jelly beans (from a total of 36) into the indent of each nest before serving.
Hints & Tips
- Work quickly – The marshmallow mixture sets fast, so shape the nests while it’s still warm and pliable.
- Grease your spoon – Lightly butter the back of the spoon to prevent sticking when pressing the indents into the nests.
- Customise the filling – Swap jelly beans for mini chocolate eggs, smarties, or other colourful sweets to match the occasion.
- Add a flavour twist – Stir in a teaspoon of vanilla extract or a pinch of cinnamon for extra flavour.
- Make ahead – These nests can be made a day in advance and stored in an airtight container until ready to serve.
