These oats and coconut cookies are crunchy and simply delicious. So easy to make even the kids can make them.

Ingredients
1 cup Sugar
1/2 cup Margarine
1 Egg
1 tsp Vanilla Essence
1/4 tsp Salt
1 cup Coconut
1 1/2 cup Flour
1/2 tsp Baking Soda
1 cup Oats
1 tsp Baking Powder
Instructions
- Preheat your oven to 180°C.
- Cream the 1/2 cup Margarine and 1 cup Sugar together until light and fluffy.
- Add the 1 Egg and 1 tsp Vanilla Essence to the mixture.
- Mix until well combined.
- Sift the 1 1/2 cup Flour, 1/2 tsp Baking Soda, 1 tsp Baking Powder, and 1/4 tsp Salt into the butter mixture.
- Add the 1 cup Coconut and 1 cup Oats.
- Mix everything together until a cohesive dough forms.
- Roll the dough into small balls and place them on a baking tray.
- Bake for approximately 15 minutes, or until golden brown.
Hints & Tips
- Room Temperature Ingredients are Key: For the best creaming results, ensure your margarine and egg are at room temperature. This helps them combine more smoothly and incorporates more air into the mixture, leading to lighter cookies.
- Don’t Overmix: Once you add the dry ingredients, mix just until everything is combined. Overmixing can develop the gluten in the flour, resulting in tougher cookies.
- Chill the Dough (Optional but Recommended): If time allows, cover the dough and chill it in the refrigerator for at least 30 minutes (or even overnight). Chilled dough is easier to handle, and the fats will solidify, preventing the cookies from spreading too much in the oven. This can also deepen the flavour.
- Even Sizing for Even Baking: Try to make your cookie balls as uniform in size as possible. This ensures they bake evenly, preventing some from being underbaked while others are overbaked. A small ice cream scoop works wonders for consistency.
- Watch for Golden Edges: Cookies are often done when the edges are lightly golden brown, even if the centers still look a little soft. They will continue to set as they cool on the baking sheet.
- Cool on the Pan First: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. This allows them to firm up slightly and prevents them from breaking apart.
- Storage: Store cooled cookies in an airtight container at room temperature for up to 3-5 days to maintain their freshness and chewiness.
- Garnish: Gently press an M&M onto the top of eack cookie before baking to give them extra pizazz.
