Easy Fruit Loaf Recipe
Ingredients
- 2/3 cup Sugar
- 1 cup Milk
- 2 cups Fruit Mince
- 1/2 cup Margarine
- 1 Egg beaten
- 1 3/4 cups Flour
- 1/2 tsp Ground Nutmeg
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- Pinch of Salt
Instructions
- Preheat oven to 180°C.
- Combine sugar, milk, margarine and fruit mince in a saucepan and bring to the boil.
- Remove from the heat and allow to cool for five minutes.
- Stir in egg, flour, nutmeg, baking soda and baking powder.
- Mix well and spoon mixture into a greased and lined pan (500g).
- Bake for about one hour and 10 minutes.

Margarine
Margarine is a processed food made from vegetable oils. It is designed to taste and look like butter. Unlike butter which contains saturated fat, it contains polyunsaturated fats.
Margarine is used in cooking and baking and as a spread on breads etc.
Margarine originated in France. Margarine consumption increased with the coming of World War 1, when diary products were very scares and strictly rationed.
Because oils are liquid, a process known as hydrogenation is used to harden the oils and make it more solid like butter. Unfortunately trans fat is a side product that is formed from during this process. A high intake of trans fats has been linked to an increased risk of chronic disease. As a result it is recommended that people stick to using soft margarine rather than the sticks of hard margarine as they contain less trans fat.
