Curried Banana Salad

This is a lovely summer salad when having a barbeque.  The hint of curry gives it a nice spicy kick to the usual lettuce and tomato salad.

Ingredients

  • 1 cup Mayonnaise
  • 1 Tbls Apricot Jam smooth
  • 1 tsp Curry medium
  • 4-5 Bananas
  • Squeeze Lemon

Instructions

  • Peel and slice bananas
  • Add a squeeze lemon.
  • Mix mayonnaise, curry powder and apricot jam well. 
  • Mix lightly with mayonnaise mixture.
  • Chill the salad before serving. 
  • The salad looks attractive served on lettuce leaves.

Bananas are high in potassium, vitamin C and B6. It is a quick energy booster for sports men and women. They say rubbing the inside of the skin onto a mosquito bite can soothe the itch – try it next time to see if it works. You can also clean your shoes with the skin. It is also good for the plants, especially roses.

To ripen a banana quicker simply place it in a brown paper bag or a plastic container with a apple or a tomato added to it.
