Curried Banana Salad
Ingredients
- 1 cup Mayonnaise
- 1 Tbls Apricot Jam smooth
- 1 tsp Curry medium
- 4-5 Bananas
- Squeeze Lemon
Instructions
- Peel and slice bananas
- Add a squeeze lemon.
- Mix mayonnaise, curry powder and apricot jam well.
- Mix lightly with mayonnaise mixture.
- Chill the salad before serving.
- The salad looks attractive served on lettuce leaves.

Banana
There are more than a thousand different varieties of bananas. They are grown in 150 countries such as Southeast Asia, the forests of Malaysia, Philippines and Indonesia. India is the largest producer of bananas. With 297 million tons grown per year. The Cavendish is the most common and widely exported.
Bananas are in the same family as lilies, orchids and palms. Bananas grow on a large herb which can grow to about 15 metres high. A cluster of bananas are called a hand and can have anything between 10-20 fingers.
Bananas are the most eaten fruit and have been for thousands of years. More than a billion bananas are eaten every year in the world. Most of them at the breakfast table.
Bananas are high in potassium, vitamin C and B6. It is a quick energy booster for sports men and women. They say rubbing the inside of the skin onto a mosquito bite can soothe the itch – try it next time to see if it works. You can also clean your shoes with the skin. It is also good for the plants, especially roses.
To ripen a banana quicker simply place it in a brown paper bag or a plastic container with a apple or a tomato added to it.
