1canCannellini Beans
2Onionsmeduim - cut into rings
2Carrotsmeduim - diced
2Potatoesmeduim - diced
1tbspMargarine
Salt & Pepper to Taste
1/2Yellow Pepperdiced
1/2cupPeas
1tbspTomato Paste
1cupVegetable Stock
1tspMixed Spice
Instructions
Melt butter in a saucepan.
Add onions fry till soft, add capsicum then the carrots and potatoes.
Stir in the stock, tomato paste, salt and pepper.
Cook till vegetables are done add beans and peas heat through.
Put into a serving dish and sprinkle parsley on top.
