Vegan Cannellini Bean Stew Recipe

This is a perfect stew for the wintery months. It is full of yummy vegetables and the beans gives you the protein you need. Serve it with fresh whole-wheat bread or brown rice. Very good!

Ingredients

  • 1 can Cannellini Beans
  • 2 Onions meduim - cut into rings
  • 2 Carrots meduim - diced
  • 2 Potatoes meduim - diced
  • 1 tbsp Margarine
  • Salt & Pepper to Taste
  • 1/2 Yellow Pepper diced
  • 1/2 cup Peas
  • 1 tbsp Tomato Paste
  • 1 cup Vegetable Stock
  • 1 tsp Mixed Spice

Instructions

  • Melt butter in a saucepan.
  • Add onions fry till soft, add capsicum then the carrots and potatoes.
  • Stir in the stock, tomato paste, salt and pepper. 
  • Cook till vegetables are done add beans and peas heat through.
  • Put into a serving dish and sprinkle parsley on top.
