
Wholemeal Muffin Recipe

2 Eggs
1 1/2 cups Brown Sugar
1/2 cup Oil
1 1/2 cups Whole Wheat Flour
1 tsp Salt
1 tsp Vanilla
1 1/2 cups Flour
2 tsp Baking Soda
2 cups Milk
1 tsp Baking Powder
Optional extras that can be added to the Wholemeal Muffin Recipe:
1 cup cake mix or any dried fruit or
1 cup dates or
1 cup walnuts
Instructions
- Preheat your oven to 200°C.
- Cream 2 eggs, 1 1/2 cups brown sugar, and 1/2 cup oil together in a mixing bowl.
- Sift 1 1/2 cups whole wheat flour, 1 1/2 cups flour, 1 tsp salt, 2 tsp baking soda, and 1 tsp baking powder together, then mix into the egg mixture.
- Add 2 cups milk and 1 tsp vanilla, stirring until combined.
- If desired, fold in 1 cup of cake mix, dried fruit, dates, or walnuts.
- Spoon mixture into muffin pans.
- Bake for 12–15 minutes or until golden brown.
