Wholemeal Muffin Recipe

Light, wholesome, and naturally sweet, these wholemeal muffins are perfect for breakfast or a grab-and-go snack. Add your favourite dried fruit, dates, or nuts for an extra flavour twist.

2 Eggs
1 1/2 cups Brown Sugar
1/2 cup Oil
1 1/2 cups Whole Wheat Flour
1 tsp Salt
1 tsp Vanilla
1 1/2 cups Flour
2 tsp Baking Soda
2 cups Milk
1 tsp Baking Powder

Optional extras that can be added to the Wholemeal Muffin Recipe:

1 cup cake mix or any dried fruit or
1 cup dates or
1 cup walnuts

Instructions

  1. Preheat your oven to 200°C.
  2. Cream 2 eggs, 1 1/2 cups brown sugar, and 1/2 cup oil together in a mixing bowl.
  3. Sift 1 1/2 cups whole wheat flour, 1 1/2 cups flour, 1 tsp salt, 2 tsp baking soda, and 1 tsp baking powder together, then mix into the egg mixture.
  4. Add 2 cups milk and 1 tsp vanilla, stirring until combined.
  5. If desired, fold in 1 cup of cake mix, dried fruit, dates, or walnuts.
  6. Spoon mixture into muffin pans.
  7. Bake for 12–15 minutes or until golden brown.
