
Watercress and Summer Fruit Salad
This salad is a delightful tribute to the vibrant tastes of summer, a refreshing and simple dish that’s as pleasing to the eye as it is to the palate.
Ingredients
2 bunches Watercress tough stems removed, coarsely chopped
3 cups Watermelon diced or balled
3 Peaches pitted & cut into wedges
1 cup Fresh blueberries
2 tsp Fresh lemon juice
Balsamic Syrup to taste
Coarsely ground black pepper to taste
Instructions
- In a large bowl, combine 3 cups of watermelon (cubed or balled), 3 peaches (in wedges), and 1 cup of blueberries.
- Drizzle with 2 teaspoons of fresh lemon juice and toss gently to coat the fruit.
- Add 2 bunches of coarsely chopped watercress (tough stems removed) and toss again to mix evenly.
- When ready to serve, drizzle with balsamic syrup to taste.
- Finish with a sprinkle of coarsely ground black pepper to taste.
