Vegan – Chocolate and Orange Cookie Recipe

1 cup Margarine
3/4 cup Brown Sugar
3 tsp Orange Rind grated
1 tsp Lemon Essence
2 cups Self-Raising Flour
2 tbsp Cocoa

Instructions

  1. Preheat your oven to 180°C.
  2. Cream 1 cup margarine, 3/4 cup brown sugar, 3 tsp grated orange rind, and 1 tsp lemon essence together in a mixing bowl.
  3. Sift 2 cups self-raising flour and 2 tbsp cocoa into the creamed mixture.
  4. Mix to form a smooth dough.
  5. Roll the dough into walnut-sized balls.
  6. Place the balls on a greased baking sheet, leaving space between each one.
  7. Flatten each ball slightly with your fingers or a fork.
  8. Bake for 15 minutes.
  9. Allow to cool for a few minutes before removing from the baking sheet.
