1 cup Margarine
3/4 cup Brown Sugar
3 tsp Orange Rind grated
1 tsp Lemon Essence
2 cups Self-Raising Flour
2 tbsp Cocoa
Instructions
- Preheat your oven to 180°C.
- Cream 1 cup margarine, 3/4 cup brown sugar, 3 tsp grated orange rind, and 1 tsp lemon essence together in a mixing bowl.
- Sift 2 cups self-raising flour and 2 tbsp cocoa into the creamed mixture.
- Mix to form a smooth dough.
- Roll the dough into walnut-sized balls.
- Place the balls on a greased baking sheet, leaving space between each one.
- Flatten each ball slightly with your fingers or a fork.
- Bake for 15 minutes.
- Allow to cool for a few minutes before removing from the baking sheet.

- Chill the dough – If the dough feels too soft, chill it for 15–20 minutes before rolling to make shaping easier.
- Enhance the flavour – Add a few drops of pure orange extract for an even bolder citrus kick.
