1/2 cup Margarine
1/2 cup Brown Sugar
1/2 cup White Sugar
1 tsp Vanilla Essence
3/4 cup Choc Chips (vegan)
1/2 tsp Salt
1 Egg Replacer
1 1/2 cup Flour
1/2 tsp Baking Soda

Instructions

  1. Preheat your oven to 180°C.
  2. In a large bowl, cream together 1/2 cup margarine, 1/2 cup brown sugar, and 1/2 cup white sugar until well combined.
  3. Add 1/2 tsp salt and 1 tsp vanilla essence, then beat until the mixture is light and fluffy.
  4. Mix in 1 egg replacer and 1/2 tsp baking soda until fully incorporated.
  5. Add 1 1/2 cups flour and stir until a soft dough forms.
  6. Fold in 3/4 cup vegan choc chips until evenly distributed.
  7. Drop tablespoonfuls of dough onto a greased baking tray, spacing them apart.
  8. Flatten the tops slightly with the back of a spoon.
  9. Bake for 15 minutes, or until the cookies are lightly golden.
  10. Cool on a wire rack before serving.
