Ingredients
2 cups Carrots (finely grated)
2 Oranges
1/2 cup Dates (chopped)
1/2 cup Walnuts (chopped)
1 tbsp Sugar
Instructions
- Finely grate 2 cups carrots and place in a large mixing bowl.
- Squeeze the juice of 1 orange and set aside.
- Peel the second orange and cut it into segments.
- Add the orange juice and orange segments to the grated carrots and mix lightly.
- Stir in 1/2 cup chopped dates and 1/2 cup chopped walnuts.
- Sprinkle with 1 tbsp sugar and toss gently to combine.
- Chill before serving for the best flavour.
