Vegan Carrot and Date Salad Recipe

Sweet, nutty, and bursting with fresh citrus flavour, this Carrot and Date Salad is a refreshing side that’s as colourful as it is delicious. Perfect for brightening up any meal.

Ingredients

2 cups Carrots (finely grated)
2 Oranges
1/2 cup Dates (chopped)
1/2 cup Walnuts (chopped)
1 tbsp Sugar

Instructions

  1. Finely grate 2 cups carrots and place in a large mixing bowl.
  2. Squeeze the juice of 1 orange and set aside.
  3. Peel the second orange and cut it into segments.
  4. Add the orange juice and orange segments to the grated carrots and mix lightly.
  5. Stir in 1/2 cup chopped dates and 1/2 cup chopped walnuts.
  6. Sprinkle with 1 tbsp sugar and toss gently to combine.
  7. Chill before serving for the best flavour.
