This is a delicious flavorsome side dish that is very easy to make. Its a nice change to the normal way of cooking rice.

Ingredients
- 1 Onion
- 1/2 Green Pepper
- 1 Tomato
- 1 cup Brown Rice
- 4 tbsp Margarine
- 2 cups Vegetable Stock
Instructions
- Chop the onion coarsely.
- Dice the tomato.
- Cut green pepper into strips.
- Stir-fry the rice in the margarine over medium heat till it starts to brown.
- Add the vegetables and stir-fry until soft.
- Add the vegetable stock and stir until well mixed.
- Cover with the lid and cook over moderate heat until all the liquid has been absorbed and rice is cooked.
- Stir occasionally.
