1 Onion
1/2 Green Pepper
1 Tomato
1 cup Brown Rice
4 tbsp Margarine
2 cups Vegetable Stock
Instructions
- Chop 1 onion coarsely, dice 1 tomato, and cut 1/2 green pepper into strips.
- In a large pan, melt 4 tbsp margarine over medium heat.
- Add 1 cup brown rice and stir-fry until it starts to brown slightly.
- Add the chopped onion, diced tomato, and green pepper strips, stirring until the vegetables are softened.
- Pour in 2 cups vegetable stock and stir until well mixed.
- Cover with a lid and cook over moderate heat until all the liquid is absorbed and the rice is tender, stirring occasionally.
- Serve hot as a main or hearty side dish.

- Use short-grain brown rice – It will give a creamier texture compared to long-grain varieties.
- Add stock gradually – For a traditional risotto texture, add the stock a little at a time, letting the rice absorb it before adding more.
