
Spicy Apple Cake Recipe

1/2 cup Margarine
1/2 cup Brown sugar
1/2 cup White sugar
2 Eggs, beaten
1 cup Pie apples, mashed
2 cups Flour
1 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
1 tsp Cinnamon
1/2 tsp Mixed spice
1/2 cup Fruit cake mix
1/2 cup Walnuts, chopped
1 tsp Vanilla essence
Caramel Icing
2 tbsp Margarine
1 cup Icing sugar
2 tsp Brown sugar
1 tsp Warm water
Instructions
- Preheat oven to 180°C.
- In a mixing bowl, beat 1/2 cup margarine, 1/2 cup brown sugar, and 1/2 cup white sugar together until light and fluffy.
- Add 2 beaten eggs and 1 tsp vanilla essence and mix until combined.
- Stir in 1 cup mashed pie apples, 1/2 cup fruit cake mix, and 1/2 cup chopped walnuts.
- In a separate bowl, sift together 2 cups flour, 1/2 tsp salt, 1 tsp baking powder, 1 tsp baking soda, 1 tsp cinnamon, and 1/2 tsp mixed spice.
- Gradually mix the sifted dry ingredients into the wet mixture until just combined.
- Spoon batter into a prepared ring pan (greased and floured).
- Bake at 180°C for 20 minutes.
- Reduce heat to 160°C and bake for a further 25 minutes or until a skewer inserted into the centre comes out clean.
- Leave to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Hints & Tips
- Use fresh apples for more flavour – If you prefer, swap the canned pie apples for fresh apples that have been cooked down until soft.
- Don’t overmix the batter – Stir just until the ingredients are combined to keep the cake light and tender.
- Test for doneness – Insert a skewer into the centre of the cake; if it comes out clean, the cake is ready.
- Let it cool completely before icing – This prevents the caramel icing from melting and sliding off the cake.
- Add extra texture – Sprinkle a few extra chopped walnuts on top of the icing for added crunch.
