
Sausage & Chickpea Stew Recipe

Ingredients
2 tbsp Oil
1 Onion
1 tsp Garlic crushed
1/2 Yellow Pepper diced
4 Sausages spicy, cut into pieces
2 cups Potatoes
1 tsp Chilli Paste
1 can Tomatoes diced
1 cup Chicken Stock
1/2 can Chickpeas drained
Instructions
- Heat 2 tbsp oil in a large frying pan over medium heat.
- Add 1 chopped onion and 1 tsp crushed garlic, frying until light brown.
- Add 1/2 diced yellow pepper and 4 spicy sausages (cut into pieces), cooking until the sausages start to brown.
- Stir in 1 tsp chilli paste and 2 cups diced potatoes, mixing well.
- Pour in 1 cup chicken stock and 1 can diced tomatoes, stirring to combine.
- Add 1/2 can drained chickpeas and mix through.
- Season with salt and pepper to taste.
- Cover with a lid and cook over medium heat for about 30 minutes, or until the potatoes are just soft.
- Serve hot with crusty bread or a side salad.

- Brown the sausages well – This adds depth of flavour and a richer taste to the stew.
- Adjust the spice – Add more or less chilli paste depending on your heat preference.
