This Sausage and Chickpeas stew is hearty and flavorful. The ideal comforting dish for those winter nights. Serve with rice or crusty bread.
Servings: 4 people
Ingredients
- 2 tbsp Oil
- 1 Onion
- 1 tsp Garlic crushed
- 1/2 Yellow Pepper diced
- 4 Sausages spicy, cut into pieces
- 2 cups Potatoes
- 1 tsp Chilli Paste
- 1 can Tomatoes diced
- 1 cup Chicken Stock
- 1/2 can Chickpeas drained
Instructions
- Heat the oil in a large frying pan.
- Fry onion and garlic until light brown.
- Add the chilli paste and potatoes.
- Mix.
- Pour the chicken stock and diced tomatoes over the sausage mixture.
- Stir through the chickpeas.
- Season with salt and pepper.
- Cover with a lid and cook over medium heat for 30 minutes or until potatoes are just soft.
- Serve.
