
Rice Salad Recipe
A light, refreshing mix of rice, juicy peaches, and crisp vegetables tossed in a creamy dressing — this Rice Salad is perfect for picnics, braais, or as a fresh summer side.

Ingredients
1 cup Rice cooked
1 Tomato
1/4 Green Pepper
1/2 cup Canned Peach Slices
2 tbsp Syrup from Peaches
1 Onion small
1 tbsp Mayonnaise
Salt & Pepper to Taste
Instructions
- Cook 1 cup rice and allow it to cool completely.
- Chop 1 tomato, 1/4 green pepper, 1 small onion, and 1/2 cup canned peach slices into bite-sized pieces.
- In a large bowl, combine the cooked rice, chopped tomato, green pepper, onion, and peach slices.
- Add 2 tbsp syrup from the peaches, 1 tbsp mayonnaise, and salt and pepper to taste.
- Mix well until everything is evenly coated.
- Serve chilled, either on its own or on a bed of lettuce leaves.

- Use cold rice – Cooking the rice ahead and chilling it will help keep the salad light and fluffy.
