Pea and Pineapple Salad Recipe

Sweet pineapple, crisp apple, tender peas, and crunchy carrots come together in this creamy Pea and Pineapple Salad. Fresh, colourful, and perfect for summer gatherings or a light side dish.

1 cup Peas cooked
1 cup Carrots
1/2 cup Mayonnaise
3 Lettuce Leaves Shredded
1/2 cup Pineapple pieces
1/2 cup Apple chopped
Salt & Pepper to Taste

Instructions

  1. Cook 1 cup carrots until tender but still slightly crunchy. Cool completely.
  2. In a mixing bowl, combine 1 cup cooked peas, the cooled carrots, 1/2 cup pineapple pieces, and 1/2 cup chopped apple.
  3. Add 1/2 cup mayonnaise, salt, and pepper to taste, then mix gently until well combined.
  4. Place 3 shredded lettuce leaves on a flat serving dish as a base.
  5. Heap the vegetable and fruit mixture on top of the lettuce.
  6. Serve chilled as a refreshing side dish.
