
Orange Cake Recipe

3 Eggs
1 cup Sugar
1 1/2 cups Flour
1 1/2 tsp Baking Powder
3/4 cup Milk
3 tbls Butter
Syrup
1/2 cup Boiling Water
1 cup Sugar
1/2 cup Orange Juice
1 1/2 tsp Orange Rind (grated)
1 tbls Butter
Instructions
- Cake – Preheat your oven to 180°C.
- In a mixing bowl, beat together the eggs and sugar until light and fluffy.
- Sift the flour and baking powder, then add to the sugar mixture.
- Heat the milk and butter until the butter melts, then add to the flour mixture and mix well.
- Pour the batter into a greased pie dish.
- Bake for 25–30 minutes until golden and cooked through.
- Syrup – While the cake is baking, add the boiling water, sugar, orange juice, grated orange rind, and butter to a saucepan.
- Bring to a boil and cook for 5 minutes.
- As soon as the cake comes out of the oven, pour the hot syrup evenly over the top.
Hints & Tips
- Use fresh oranges – Freshly squeezed juice and zest will give a brighter, more intense citrus flavour.
- Prick the cake before adding syrup – This helps the syrup soak in evenly for extra moisture.
- Serve with cream – A dollop of whipped cream balances the sweetness perfectly.
