One-Pot Chicken & Rice Recipe

This hearty one-pot chicken and rice is a true weeknight hero, full of flavour and so easy to make. Everything bakes together for a comforting dish the whole family will love.

Ingredients

6 Chicken Thighs
1 1/2 cups Rice
2 Onions (chopped)
2 Tomatoes (peeled & chopped)
1 pkt Mushroom Soup
2 cups Water (boiling)
2 tbls Oil
Chicken Spice to Taste
Salt to Taste

Instructions

  1. Preheat your oven to 180°C.
  2. Sprinkle 6 chicken thighs with salt and chicken spice to taste.
  3. Place 1 1/2 cups rice in a large casserole dish.
  4. Sprinkle 1 packet mushroom soup powder evenly over the rice.
  5. Arrange the chicken pieces on top of the rice.
  6. Add 2 chopped onions and 2 peeled, chopped tomatoes over the chicken.
  7. Pour 2 cups boiling water over the mixture.
  8. Cover and bake for 1 hour or until the chicken is cooked through.
  9. Remove the cover about 10 minutes before the end of cooking time to allow the chicken to brown.
  10. If the rice looks too dry, add a little more water or stock during cooking.
  11. Serve hot with peas and a salad.

Hints & Tips

  • Add extra veggies – Peas, carrots, or green beans can be added for colour and nutrition.
  • Use chicken stock instead of water – This will give the rice a richer, deeper flavour.
  • Make it crispy – For extra golden skin, brush the chicken with a little oil before baking uncovered.
