
One-Pot Chicken & Rice Recipe
This hearty one-pot chicken and rice is a true weeknight hero, full of flavour and so easy to make. Everything bakes together for a comforting dish the whole family will love.

Ingredients
6 Chicken Thighs
1 1/2 cups Rice
2 Onions (chopped)
2 Tomatoes (peeled & chopped)
1 pkt Mushroom Soup
2 cups Water (boiling)
2 tbls Oil
Chicken Spice to Taste
Salt to Taste
Instructions
- Preheat your oven to 180°C.
- Sprinkle 6 chicken thighs with salt and chicken spice to taste.
- Place 1 1/2 cups rice in a large casserole dish.
- Sprinkle 1 packet mushroom soup powder evenly over the rice.
- Arrange the chicken pieces on top of the rice.
- Add 2 chopped onions and 2 peeled, chopped tomatoes over the chicken.
- Pour 2 cups boiling water over the mixture.
- Cover and bake for 1 hour or until the chicken is cooked through.
- Remove the cover about 10 minutes before the end of cooking time to allow the chicken to brown.
- If the rice looks too dry, add a little more water or stock during cooking.
- Serve hot with peas and a salad.
Hints & Tips
- Add extra veggies – Peas, carrots, or green beans can be added for colour and nutrition.
- Use chicken stock instead of water – This will give the rice a richer, deeper flavour.
- Make it crispy – For extra golden skin, brush the chicken with a little oil before baking uncovered.
