
Noodle Salad Recipe
A colourful and flavour-packed noodle salad with juicy peaches, creamy curry dressing and bursts of sweet sultanas that’s perfect for summer gatherings.

Ingredients
1 pkt Noodles
1 can Peach/Apricot Slices
1/2 cup Mayonnaise
1/2 Red/Green Pepper
3/4 cup Cheese
1 tsp Medium Curry more to Taste
1 Onion chopped
1/2 cup Sultanas
Instructions
- Cook 1 packet noodles according to packet instructions. Rinse and drain well.
- Drain 1 can peach or apricot slices, reserving the syrup.
- In a bowl, mix the reserved syrup with 1/2 cup mayonnaise and 1 teaspoon medium curry powder (or more to taste).
- Cut the peach or apricot slices into smaller pieces.
- In a large mixing bowl, combine the cooked noodles, chopped peaches, 3/4 cup cheese, 1/2 red or green pepper (diced), 1 onion (chopped), and 1/2 cup sultanas.
- Pour the curry dressing over the salad and mix well.
- Chill in the fridge before serving.
Hints & Tips
- Use fresh peaches for extra flavour – If they’re in season, ripe fresh peaches make this salad even better.
- Add crunch – Toss in some toasted sunflower seeds or chopped nuts for extra texture.
- Make ahead – This salad tastes even better after a few hours in the fridge as the flavours have time to mingle.
