1 cup Sugar
1/2 cup Margarine
2 Eggs
1 Lemon rind
1 1/2 cup Self-Raising Flour
1/4 tsp Salt
1/2 cup Milk
Sauce
1/2 cup Sugar
1 Lemon rind
2 Lemons juice
Instructions
- Loaf: Preheat your oven to 180°C and grease a loaf tin.
- In a large mixing bowl, beat together 1/2 cup margarine and 1 cup sugar until creamy.
- Add 2 eggs and mix until well combined.
- Stir in 1 1/2 cups self-raising flour, 1/4 tsp salt, and the rind of 1 lemon.
- Gradually add 1/2 cup milk, mixing until you have a smooth batter.
- Pour the batter into the prepared loaf tin and bake for 45–60 minutes, or until a skewer inserted in the centre comes out clean.
- While still hot, prick the loaf all over with a fork.
- Sauce: In a small bowl, combine 1/2 cup sugar, the rind of 1 lemon, and the juice of 2 lemons. Microwave for about 40 seconds or until the sugar has melted.
- Pour the hot sauce evenly over the loaf while it is still warm.
- Let the loaf cool slightly before slicing and serving.
Hints & Tips
- Use fresh lemons – Fresh juice and rind will give a brighter, more vibrant flavour than bottled juice.
- Don’t overmix – Overmixing can make the loaf dense instead of light and fluffy.
- Soak well – Pour the sauce over the loaf while it’s hot so it soaks into every slice.
- Check early – Start testing for doneness at the 45-minute mark to avoid overbaking.
- Serve chilled or warm – This loaf is delicious either slightly warm or served cold from the fridge.
