Lemon Loaf Recipe

This Lemon Loaf is soft, buttery, and bursting with zesty lemon flavour, topped with a tangy lemon sauce that soaks into every slice for a refreshing treat.

1 cup Sugar
1/2 cup Margarine
2 Eggs
1 Lemon rind
1 1/2 cup Self-Raising Flour
1/4 tsp Salt
1/2 cup Milk

Sauce

1/2 cup Sugar
1 Lemon rind
2 Lemons juice

Instructions

  1. Loaf: Preheat your oven to 180°C and grease a loaf tin.
  2. In a large mixing bowl, beat together 1/2 cup margarine and 1 cup sugar until creamy.
  3. Add 2 eggs and mix until well combined.
  4. Stir in 1 1/2 cups self-raising flour, 1/4 tsp salt, and the rind of 1 lemon.
  5. Gradually add 1/2 cup milk, mixing until you have a smooth batter.
  6. Pour the batter into the prepared loaf tin and bake for 45–60 minutes, or until a skewer inserted in the centre comes out clean.
  7. While still hot, prick the loaf all over with a fork.
  8. Sauce: In a small bowl, combine 1/2 cup sugar, the rind of 1 lemon, and the juice of 2 lemons. Microwave for about 40 seconds or until the sugar has melted.
  9. Pour the hot sauce evenly over the loaf while it is still warm.
  10. Let the loaf cool slightly before slicing and serving.

  • Use fresh lemons – Fresh juice and rind will give a brighter, more vibrant flavour than bottled juice.
  • Don’t overmix – Overmixing can make the loaf dense instead of light and fluffy.
