1/2 tbls Gelatine
2 tbls Water cold
1/2 cup Condensed Milk
1 Egg separated
Pinch Salt

Instructions

  1. Heat 410 g guavas with their syrup in a saucepan.
  2. Strain the juice from the guavas and add enough water to make 1 cup of liquid.
  3. Return the juice to the pot and bring to the boil.
  4. Remove from the heat and stir in 1/2 tbsp gelatine that has been softened in 2 tbsp cold water.
  5. Allow to cool slightly, then add the finely chopped guavas and 1/2 cup condensed milk.
  6. Beat 1 egg white with a pinch of salt until stiff peaks form.
  7. When the guava mixture begins to set, gently fold in the beaten egg white.
  8. Spoon into glass ice cream bowls and chill until fully set.
  9. Decorate with sliced guavas and a dollop of cream before serving.

Hints & Tips

  • Use ripe guavas – Fresh, ripe guavas will give a more fragrant and intense flavour than canned.
  • Chill the bowls – Serving in pre-chilled glass bowls will keep the mousse cool for longer.
  • Don’t rush the folding – Gently fold the egg whites to keep the mousse airy and light.
  • Make it ahead – This mousse can be made a day before and kept chilled until serving.
  • Extra garnish – A sprig of mint or a light dusting of icing sugar makes for a beautiful presentation.
