
Guava Mousse Recipe
This Guava Mousse is light, creamy, and bursting with tropical flavour, making it a refreshing dessert that is as elegant as it is easy to prepare.

Ingredients
410g Guavas with Syrup
1/2 tbls Gelatine
2 tbls Water cold
1/2 cup Condensed Milk
1 Egg separated
Pinch Salt
Instructions
- Heat 410 g guavas with their syrup in a saucepan.
- Strain the juice from the guavas and add enough water to make 1 cup of liquid.
- Return the juice to the pot and bring to the boil.
- Remove from the heat and stir in 1/2 tbsp gelatine that has been softened in 2 tbsp cold water.
- Allow to cool slightly, then add the finely chopped guavas and 1/2 cup condensed milk.
- Beat 1 egg white with a pinch of salt until stiff peaks form.
- When the guava mixture begins to set, gently fold in the beaten egg white.
- Spoon into glass ice cream bowls and chill until fully set.
- Decorate with sliced guavas and a dollop of cream before serving.
Hints & Tips
- Use ripe guavas – Fresh, ripe guavas will give a more fragrant and intense flavour than canned.
- Chill the bowls – Serving in pre-chilled glass bowls will keep the mousse cool for longer.
- Don’t rush the folding – Gently fold the egg whites to keep the mousse airy and light.
- Make it ahead – This mousse can be made a day before and kept chilled until serving.
- Extra garnish – A sprig of mint or a light dusting of icing sugar makes for a beautiful presentation.
