
Fruit and Vegetable Salad Recipe
This Fruit & Vegetable Salad combines the sweetness of apples and pineapple with tender potatoes and fresh green peas for a colourful and refreshing side dish.

Ingredients
1/2 cup Apples diced
1/2 cup Pineapple diced
1/2 cup Potatoes cooked & diced
1/2 cup Green Peas cooked
Lettuce Leaves
2 tbls Mayonnaise
Salt & Pepper
Instructions
- Dice 1/2 cup apples and 1/2 cup pineapple into small, even pieces.
- Cook and dice 1/2 cup potatoes, and cook 1/2 cup green peas until tender. Let both cool completely.
- In a mixing bowl, combine the apples, pineapple, potatoes, and peas.
- Add 2 tbsp mayonnaise, salt, and pepper to taste. Mix gently until everything is coated.
- Arrange a layer of lettuce leaves on a serving platter.
- Spoon the fruit and vegetable mixture over the lettuce.
- Chill before serving for the best flavour.
