This is a quick fruit cake recipe for the day that you haven’t got hour to bake a fruit cake. It is full of delicious fruit. There is still time to bake this one before Christmas.

  • 439 g Crushed Pineapple
  • 2 cups Mixed Fruit
  • 1 cup Raw Sugar
  • 1 tsp Mixed Spice
  • 1/2 cup Butter
  • 1/4 cup Mixed Nuts
  • 2 cups Flour
  • 2 tsp Baking Powder
  • 2 Eggs
  • Pinch of Salt
  1. Preheat the oven to 150°C.

  2. Cook pineapple, mixed fruit, sugar and butter on low heat.

  3. Cool it. 

  4. Sift together flour, baking powder, salt and spice. 

  5. Mix well.

  6. Bake for 1 hour or until skewer comes out clean.
