Fruit Cake Recipe

This moist and flavourful Fruit Cake combines pineapple, mixed fruit, and warm spices with a tender crumb, making it perfect for celebrations or as a comforting afternoon treat.

439g Crushed Pineapple
2 cups Mixed Fruit
1 cup Raw Sugar
1 tsp Mixed Spice
1/2 cup Butter
1/4 cup Mixed Nuts
2 cups Flour
2 tsp Baking Powder
2 Eggs
Pinch of Salt

Instructions

  1. Fruit mixture: Preheat your oven to 150°C. In a saucepan, combine 439 g crushed pineapple, 2 cups mixed fruit, 1 cup raw sugar, and 1/2 cup butter. Cook over low heat until the butter is melted and the mixture is well combined. Remove from heat and allow to cool.
  2. Dry ingredients: In a large mixing bowl, sift together 2 cups flour, 2 tsp baking powder, a pinch of salt, and 1 tsp mixed spice.
  3. Combining: Add the cooled fruit mixture to the dry ingredients and mix until combined. Stir in 1/4 cup mixed nuts and 2 beaten eggs.
  4. Pour the batter into a greased and lined loaf tin or cake tin.
  5. Bake for about 1 hour, or until a skewer inserted into the centre comes out clean.
  6. Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
