Fruit Cake Recipe
This is a quick fruit cake recipe for the day that you haven't got hour to bake a fruit cake. It is full of delicious fruit. There is still time to bake this one before Christmas.
Servings: 10 people
Ingredients
- 439 g Crushed Pineapple
- 2 cups Mixed Fruit
- 1 cup Raw Sugar
- 1 tsp Mixed Spice
- 1/2 cup Butter
- 1/4 cup Mixed Nuts
- 2 cups Flour
- 2 tsp Baking Powder
- 2 Eggs
- Pinch of Salt
Instructions
- Preheat the oven to 150°C.
- Cook pineapple, mixed fruit, sugar and butter on low heat.
- Cool it.
- Sift together flour, baking powder, salt and spice.
- Mix well.
- Bake for 1 hour or until skewer comes out clean.
