
Fish Fingers and Potatoes Recipe
Layers of tender potato slices, savoury bacon and onions, and juicy tomatoes topped with crispy fish fingers create a quick and comforting family meal.

400g Fish Finger
125g Bacon
500g Potatoes
2 Tomatoes meduim
Salt & Pepper to taste
3 Onions small
5 tbsp Butter
Instructions
- Preparation: Preheat your oven to 180°C. Cook 500 g potatoes until tender, then slice them into even rounds.
- Chop 2 medium tomatoes, 3 small onions, and 125 g bacon.
- In a frying pan, melt 3 tbsp butter and fry the onions and bacon until golden.
- Add the chopped tomatoes and cook until softened.
- Assembly: In a greased ovenproof dish, arrange half the potato slices as the base layer.
- Spoon half of the tomato, onion, and bacon mixture over the potatoes.
- Repeat with the remaining potatoes and then the remaining tomato mixture.
- Arrange 400 g fish fingers evenly on top of the final layer.
- Baking: Bake for about 15 minutes, or until the fish fingers are golden and cooked through.
- Season with salt and pepper to taste and serve immediately.
