
Date and Walnut Squares Recipe
Sweet, chewy dates and crunchy walnuts come together in these soft, zesty squares, topped with a fresh lemon glaze. A simple bake with old-school charm and irresistible flavour.

Ingredients
1 cup Sugar
1/2 cup Margarine
2 Eggs
2 cups Flour
2 tsp Baking Powder
1/2 cup Coconut
1 1/2 cups Dates chopped
1/2 cup Walnuts
1 Lemon juice and grated rind
1/3 cup Milk
Instructions
- Preheat your oven to 180°C.
- Cream 1/2 cup margarine and 1 cup sugar together in a mixing bowl until light and fluffy.
- Add 2 eggs and beat well.
- Sift together 2 cups flour and 2 tsp baking powder, then add to the mixture.
- Stir in 1/2 cup coconut, 1 1/2 cups chopped dates, 1/2 cup walnuts, the juice and grated rind of 1 lemon, and 1/3 cup milk.
- Mix to a dough and spoon into a prepared 25cm x 25cm baking tin.
- Bake for 40 minutes or until done.
- Cool in the tin for 5 minutes, then turn out onto a cooling rack to cool completely.
- For the icing, mix 1 cup sifted icing sugar with about 2 tbsp lemon juice to make a glace icing.
- Spoon the icing over the cooled squares and decorate with walnut halves or pieces.
Hints & Tips
- Use fresh dates – Fresh, soft dates will give a richer flavour and a moist texture compared to dried, hard ones.
- Toast the walnuts – Lightly toasting the walnuts before adding them will enhance their nutty flavour.
- Check early – Ovens vary, so start checking for doneness around the 35-minute mark to prevent overbaking.
- Add extra lemon – For a tangier glaze, add more lemon juice to the icing to taste.
- Cut neatly – Use a sharp knife dipped in hot water for clean, even slices.
