1/2 cup Walnuts
1 Lemon juice and grated rind
1/3 cup Milk

Instructions

  1. Preheat your oven to 180°C.
  2. Cream 1/2 cup margarine and 1 cup sugar together in a mixing bowl until light and fluffy.
  3. Add 2 eggs and beat well.
  4. Sift together 2 cups flour and 2 tsp baking powder, then add to the mixture.
  5. Stir in 1/2 cup coconut, 1 1/2 cups chopped dates, 1/2 cup walnuts, the juice and grated rind of 1 lemon, and 1/3 cup milk.
  6. Mix to a dough and spoon into a prepared 25cm x 25cm baking tin.
  7. Bake for 40 minutes or until done.
  8. Cool in the tin for 5 minutes, then turn out onto a cooling rack to cool completely.
  9. For the icing, mix 1 cup sifted icing sugar with about 2 tbsp lemon juice to make a glace icing.
  10. Spoon the icing over the cooled squares and decorate with walnut halves or pieces.

Hints & Tips

  • Use fresh dates – Fresh, soft dates will give a richer flavour and a moist texture compared to dried, hard ones.
  • Toast the walnuts – Lightly toasting the walnuts before adding them will enhance their nutty flavour.
  • Check early – Ovens vary, so start checking for doneness around the 35-minute mark to prevent overbaking.
  • Add extra lemon – For a tangier glaze, add more lemon juice to the icing to taste.
  • Cut neatly – Use a sharp knife dipped in hot water for clean, even slices.
