Crust

3 cups Flour
2 tsp Baking Powder
Pinch Salt
1 cup Butter
1 cup Sugar
2 Eggs

Filling

3 cups Milk
1 1/2 tbsp Butter
2 tbsp Cornflour
1 tbsp Flour
Pinch of Salt

1 cup Sugar

Instructions

  1. Crust: Preheat your oven to 180°C. Cream together 1 cup butter and 1 cup sugar until light and fluffy.
  2. Add 2 eggs and beat well until combined.
  3. Sift together 3 cups flour, 2 tsp baking powder, and a pinch of salt, then mix into the creamed mixture to form a dough.
  4. Press the dough thinly into a pie dish. This amount of dough makes enough for 4 crusts, so divide as needed.
  5. Bake for 15 minutes or until light golden brown. Let cool before adding the filling.
  6. Filling: In a small bowl, mix 2 tbsp cornflour, 1 tbsp flour, and a pinch of salt with a little of the 3 cups milk to make a smooth paste.
  7. Heat the remaining milk with 1 1/2 tbsp butter in a saucepan until it reaches boiling point.
  8. In a separate bowl, beat 3 eggs with 1 cup sugar, then add the cornflour paste and mix well.
  9. Slowly add this mixture to the boiling milk, stirring constantly.
  10. Boil for 5 minutes, stirring all the time, until thickened.
  11. Pour the custard into the cooled crust and allow to cool completely before serving.
