
Curried Eggs Recipe
This creamy Curried Eggs dish is a comforting, flavour-packed favourite. Perfect served over fluffy rice with a sprinkle of almonds for extra crunch.

3 Eggs (hard boiled)
1 Onion (meduim)
1 cup Mixed Vegetables
1 tbls Margarine
1 tsp Curry Powder
2 tsp Sugar
1 tbls Flour
1 tbls Vinegar
1 cup Stock
Instructions
- Preheat your oven to 180°C.
- Fry the 1 medium onion in 1 tablespoon margarine, then add 1 cup mixed vegetables and fry until tender.
- Mix the 1 teaspoon curry powder, 2 teaspoons sugar, and 1 tablespoon flour together, then moisten with 1 tablespoon vinegar.
- Add the mixture to the vegetables and gradually stir in 1 cup stock.
- Simmer for 10 minutes, stirring constantly.
- Slice or halve the 3 hard-boiled eggs and add them to the curry sauce, heating through gently.
- Serve on a bed of rice and garnish with almonds.
Hints & Tips
- Adjust the heat – Add extra curry powder or a pinch of chilli for a spicier kick.
- Use fresh vegetables – Freshly steamed mixed vegetables will give better flavour and texture than frozen.
- Make ahead – The curry sauce can be made in advance and reheated before adding the eggs.
