1 cup Mayonnaise
1 Tbls Apricot Jam (smooth)
1 tsp Curry (medium)
4-5 Bananas
Squeeze of Lemon
Instructions
- Peel and slice 4–5 bananas, then add a squeeze of lemon to prevent browning.
- In a bowl, mix 1 cup mayonnaise, 1 tbsp smooth apricot jam and 1 tsp medium curry powder until well combined.
- Gently fold the banana slices into the mayonnaise mixture, taking care not to mash them.
- Chill the salad before serving for best flavour.
- Serve on fresh lettuce leaves for a pretty presentation.
