Curried Banana Salad Recipe

Creamy, fruity and lightly spiced, this curried banana salad is a simple yet surprising side dish that’s perfect for adding a sweet and savoury twist to your table.

1 cup Mayonnaise
1 Tbls Apricot Jam (smooth)
1 tsp Curry (medium)
4-5 Bananas
Squeeze of Lemon

Instructions

  1. Peel and slice 4–5 bananas, then add a squeeze of lemon to prevent browning.
  2. In a bowl, mix 1 cup mayonnaise, 1 tbsp smooth apricot jam and 1 tsp medium curry powder until well combined.
  3. Gently fold the banana slices into the mayonnaise mixture, taking care not to mash them.
  4. Chill the salad before serving for best flavour.
  5. Serve on fresh lettuce leaves for a pretty presentation.
