Ingredients

700g Fish
Salt & Pepper to Taste
1/3 cup Flour
1 tbsp Parsley chopped
1 sheet Puff Pastry
1/4 cup Margarine
1 Onion chopped
1 1/4 cups Milk
2 Eggs hard boiled
1 small Tin of Mushrooms
Milk / Water to cover the Fish

Instructions

  1. Preheat your oven to 200°C.
  2. Place 700g fish in a saucepan with salt and pepper to taste, then add enough milk or water to cover the fish. Bring to the boil.
  3. Cover with a lid and let stand for 5 minutes, then flake the fish into bite-sized pieces.
  4. In a saucepan, melt 1/4 cup margarine and sauté 1 chopped onion until soft.
  5. Stir in 1/3 cup flour, then gradually add 1 1/4 cups milk while stirring continuously.
  6. Bring to the boil, stirring, and cook until the sauce thickens. If too thick, add more milk.
  7. In a large bowl, combine the flaked fish, 2 chopped hard-boiled eggs, 1 tbsp chopped parsley, and 1 small tin of mushrooms.
  8. Pour the sauce over the fish mixture and mix lightly.
  9. Transfer the filling to a prepared pie dish.
  10. Place 1 sheet puff pastry over the filling, pinching the edges to seal.
  11. Cut small slits in the pastry to allow steam to escape, and decorate the top with any leftover pastry.
  12. Brush the pastry with milk or beaten egg.
  13. Bake for 35 minutes or until the pastry is golden brown.

Hints & Tips

  • Use a mix of fish – Combining white fish with smoked fish adds extra depth of flavour.
  • Make it creamier – Stir a splash of cream into the sauce for a richer filling.
  • Add vegetables – Peas, sweetcorn, or spinach make tasty and colourful additions to the filling.
  • Prevent a soggy base – Let the fish mixture cool slightly before topping with pastry.
  • Brush twice – For an extra golden crust, brush the pastry once before baking and again halfway through.
