
Coffee Biscuits Recipe
These Coffee Biscuits are soft, fragrant, and infused with a rich coffee flavour, making them the perfect companion to your afternoon tea or coffee break.

1/2 cup Margarine
1/2 cup Sugar
1 tsp Water boiling
1 tsp Coffee
1/2 cup Apricot Jam
1 tsp Baking Soda
2 tbls Water
1/2 tsp Vanilla Essence
2 cups Flour
Pinch of Salt
Instructions
- Preheat your oven to 180°C and line a baking tray with parchment paper.
- Cream together 1/2 cup margarine and 1/2 cup sugar until light and fluffy.
- Dissolve 1 tsp coffee in 1 tsp boiling water, then stir in 1/2 cup apricot jam.
- Add the coffee and jam mixture to the creamed margarine and sugar, mixing well.
- In a small bowl, mix 1 tsp baking soda with 2 tbsp water and 1/2 tsp vanilla essence, then add to the mixture.
- Sift together 2 cups flour and a pinch of salt, then gradually add to the wet ingredients, mixing to form a dough.
- Roll the dough into small balls and place them on the prepared baking tray, leaving space between each one.
- Bake for 10–15 minutes or until lightly golden.
- Cool on a wire rack before serving.

- Use strong coffee – A richer brew will give the biscuits a deeper, more robust flavour.
- Chill the dough – If the dough feels sticky, refrigerate it for 15 minutes before rolling into balls.
- Even sizing – Roll all the biscuits to the same size for even baking.
- Store well – Keep in an airtight container to maintain freshness for up to a week.
- Optional glaze – Drizzle with a light coffee icing for an extra touch of flavour.
