Ingredients

1 cup Margarine
1 can Condensed Milk
1/2 cup Sugar
2 packets Vanilla Biscuits
1 tbsp Orange Juice
1/2 tsp Lemon Essence
2 cups Coconut

Instructions

  1. Melt 1 cup margarine, 1 can condensed milk, 1/2 cup sugar, 1 tbsp orange juice, and 1/2 tsp lemon essence together in a saucepan over low heat.
  2. Crush 2 packets vanilla biscuits into fine crumbs.
  3. Add the crushed biscuits and 2 cups coconut to the melted mixture, stirring until well combined.
  4. Remove from heat and press the hot mixture evenly into a flat glass dish.
  5. Sprinkle with grated orange rind and extra coconut.
  6. Refrigerate until set.
  7. Cut into squares and serve chilled.

Hints & Tips

  • Use fresh citrus – Freshly squeezed orange juice and grated rind will give the slice a brighter flavour.
  • Crush biscuits finely – A finer crumb will give a smoother, more even texture.
  • Press firmly – Compact the mixture well in the dish to help it hold together when sliced.
  • Chill thoroughly – Allow at least 2 hours in the fridge before slicing for clean, neat squares.
  • Make it extra zesty – Add a little extra orange zest to the mixture for a stronger citrus kick.
