
Chilli Con Carne Recipe

Ingredients
2 Onions chopped
1 Capsicum green / yellow
2 Cloves Garlic
2 tbls Tomato Puree
1 pkt Tomato & Vegetable Soup
3 tbls Oil
500g Mince
1 cup Water hot
2 tbls Parsley chopped
1 tin Baked Beans in Tomato Sauce
Salt & Pepper to Taste
Chillies to Taste
Instructions
- Chop 2 onions, 1 green or yellow capsicum, and crush 2 cloves garlic.
- Heat 3 tablespoons oil in a large pan and fry the onions for 5 minutes.
- Add the capsicum and fry for a further 4 minutes.
- Add chopped chillies or chilli powder to taste and cook for 1 minute.
- Add 500g mince and fry until the meat starts browning.
- Mix 1 packet of tomato & vegetable soup powder with 1 cup hot water.
- Pour the soup mixture into the pan with the meat and cook for 10 minutes.
- Add 1 tin baked beans in tomato sauce and 2 tablespoons tomato puree.
- Season with salt and pepper to taste.
- Stir in 2 tablespoons chopped parsley just before serving.
- Serve hot with rice or couscous.
Hints & Tips
- Adjust the heat – Add more or fewer chillies depending on how spicy you like it.
- Make it richer – Add a splash of red wine for a deeper flavour.
- Bulk it up – Add extra beans or vegetables for a heartier meal.
