This is a very tasty midweek meal that does not take long to prepare. Serve it with a salad or mixed vegetables. The tomatoes keeps it nice and moist.

Ingredients
- 4 Chicken Breast
- Salt & Pepper to Taste
- 1 tsp Chicken Spice
- 1 Tomato sliced
- 1/2 cup Cheese grated
Instructions
- Preheat oven to 190°C.
- Cut chicken breasts in half, length wise.
- Flatten them slightly with a mallet.
- Season to taste.
- Put some cheese on one half of each breast and then a slice of tomato.
- Season with salt and pepper.
- Fold chicken breast in half.
- Secure with a toothpick.
- Put a slice of tomato on top of each breast.
- Sprinkle with remaining cheese.
- Bake uncovered for about 40 minutes or until done.
- Remove toothpick .
- Serve hot.
