1 tsp Chicken Spice
1 Tomato sliced
1/2 cup Cheese grated
Instructions
- Preheat your oven to 190°C. Lightly grease a baking dish.
- Cut 4 chicken breasts in half lengthwise and flatten slightly with a mallet.
- Season both sides of the chicken with salt, pepper, and 1 tsp chicken spice.
- Place some grated cheese on one half of each chicken breast, then top with a slice of tomato.
- Fold the chicken breast over to enclose the filling and secure with a toothpick.
- Place a slice of tomato on top of each folded breast and sprinkle with the remaining cheese.
- Bake uncovered for about 40 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.
- Remove the toothpicks before serving.
Hints & Tips
- Pound evenly – Flatten the chicken breasts evenly so they cook at the same rate.
- Use a melting cheese – Mozzarella, gouda, or cheddar work well for a gooey filling.
- Secure tightly – Use toothpicks or small skewers to keep the filling from spilling out while baking.
- Add a crispy coating – For extra texture, coat the chicken in breadcrumbs before baking.
- Let it rest – Rest the chicken for a few minutes before serving to keep the juices in.
