Ingredients

2 cups Cake Flour
1 tbsp Baking Powder
1 1/2 cups Cheese grated
1 tbsp Parsley
1 1/2 cups Milk
3 tbsp Margarine
1 tsp Marmite
Salt to Taste

Instructions

  1. Preheat your oven to 200°C.
  2. Sift 2 cups cake flour, 1 tbsp baking powder, and salt to taste into a mixing bowl.
  3. Add 1 1/2 cups grated cheese and 1 tbsp parsley, mixing lightly to combine.
  4. Pour in 1 1/2 cups milk and stir until just combined — do not overmix.
  5. Spoon the mixture evenly into 12 greased or lined muffin cups.
  6. Bake for 15 minutes, or until the tops start to brown and a skewer inserted comes out clean.
  7. While the muffins bake, melt 3 tbsp margarine with 1 tsp Marmite in the microwave until smooth. Stir well.
  8. As soon as the muffins come out of the oven, spoon the warm Marmite mixture over the tops.
  9. Serve warm for the best flavour and texture.

  • Don’t overmix – Overmixing will make the muffins dense instead of light and fluffy.
  • Adjust Marmite strength – If you prefer a milder flavour, reduce the Marmite to 1/2 tsp.
