Cheddar Cheese
Cheddar cheese originated in the English village of Cheddar in Summerset. On the edge of Cheddar there is a gorge with a number of caves with the right humidity and steady temperature to mature cheese. Cheddar cheese has been produced there since the 11th century.
The Williams family developed the first cheddar cheese factory in the US. Before that cheese was made on farms.
Cheddar is the most popular cheese in the UK and the 2nd most popular in the United States.
The Americans add a spice called annatto, which is extracted from the seeds of a tropical achiote tree, to their cheddar cheese. This gives the cheese a yellow colour. In other countries the colour varies from light yellow to orange. The colour also depends on whether the cows are grain fed or grass fed.
Cheddar cheese has a sharp, pungent flavour with a firm to slightly crumbly texture. There are different “strengths” of cheddar cheese which depends on it’s flavour. They are classified as mild, medium, sharp and extra sharp cheddar. It’s flavour depends on how long the cheese has been aged. The older the cheese the stronger the taste and the more crumbly the cheese becomes.
