
Butternut Salad Recipe
Fresh, fruity and full of vibrant colour, this butternut salad is a refreshing make-ahead side that bursts with tropical sweetness.

Ingredients
1 cup butternut (raw & peeled)
1 can passion fruit (small)
1 can pineapple (pieces)
Instructions
- Grate 1 cup raw, peeled butternut and place it into a mixing bowl.
 - Drain 1 can pineapple pieces and add them to the butternut.
 - Pour in 1 small can of passion fruit, including the juice, and mix gently until well combined.
 - Cover and refrigerate overnight to allow the flavours to blend.
 - Serve chilled as a refreshing side dish.
 
Hints & Tips
- Choose sweet, ripe butternut – A naturally sweet butternut will balance perfectly with the tropical fruit flavours.
 - Drain pineapple well – This prevents the salad from becoming too watery.
 - Make it ahead – Chilling overnight really enhances the flavour and softens the butternut slightly.
