
Pasta and Green Beans Recipe
A fresh, nutty and creamy pasta dish packed with vibrant green beans and crunchy walnuts, perfect for a light yet satisfying meal.

Ingredients
1 cup Walnuts
1 tbls Margarine
6-8 stems Spring Onions
1 bunch Parsley
2 cloves Garlic (chopped)
1/2 cup Vegetable Stock
1/2 cup Soya Cream
2 cups Pasta
1 cup Green Beans (trimmed & halved)
Instructions
- Roast 1 cup walnuts in a frying pan over medium heat for 2-3 minutes, stirring constantly, then set aside to cool.
- Melt 1 tablespoon margarine in a saucepan, add 6-8 stems chopped spring onions, 2 chopped garlic cloves and 1 bunch chopped parsley. Cook for 2 minutes.
- Add 1/2 cup vegetable stock and cook over medium heat for 7 minutes.
- Stir in 1/2 cup soya cream and cook for a further 5 minutes. Taste and adjust seasoning if needed.
- Bring a large pan of water to the boil, add salt, and cook 2 cups pasta according to packet instructions.
- In the last 4 minutes of cooking time, add 1 cup trimmed and halved green beans to the pasta water.
- Drain pasta and beans, toss with the creamy walnut sauce, and top with the roasted walnuts before serving.
Hints & Tips
- Use fresh beans if you can – They add a vibrant crunch and fresh flavour to the dish.
- Toast the walnuts – This enhances their nutty flavour and makes them extra fragrant.
- Make it richer – For a more indulgent sauce, swap soya cream for regular cream if not making it vegan.
