Wholemeal Muffin Recipe

Wholemeal Muffin Recipe - Hearty and healthy with raisins or dates. You can use only half the batter and put the other half in the fridge for later use.

Ingredients

  • 2 Eggs
  • 1 1/2 cups Brown Sugar
  • 1/2 cup Oil
  • 1 1/2 cups Whole Wheat Flour
  • 1 tsp Salt
  • 1 tsp Vanilla
  • 1 1/2 cups Flour
  • 2 tsp Baking Soda
  • 2 cups Milk
  • 1 tsp Baking Powder

Instructions

  • Preheat oven to 200°C.
  • Cream eggs, sugar and oil together. 
  • Sift dry ingredients and mix into the eggs mixture.
  • Add milk, vanilla and dried fruit.
  • Bake in muffin pans 12-15 minutes.

Notes

Optional extras that can be added to the Wholemeal Muffin Recipe:
1 cup cake mix or any dried fruit or
1 cup dates or
1 cup walnuts

Brown Sugar

Brown sugar is made by adding sugar cane molasses to completely white refined sugar crystals. Brown sugar may contain slightly more essential nutrients than while sugar. It isn’t necessarily good for you. There are two types of brown sugar, light and dark. The lighter the brown sugar the more delicate the flavor. Dark brown sugar has a more intense molasses flavour.
Brown sugar is often use in baking and cooking. When you want to bake but have no brown sugar, simply add some molasses to some white sugar. Light brown sugar contains 3.5 percent molasses and dark brown sugar 6.5 percent. By adding molasses to white sugar you are doing what they are doing at the factory, but much cheaper. Molasses is obtained from sugar cane. Brown sugar has slightly less calories than white sugar.
