This is the best Vanilla Cake recipe I have come across so far. This vanilla cake is light, moist and packed with flavor. A nice cake for any birthday or other occasion. You can half the recipe if you want a smaller cake.
Vanilla Cake Recipe
Servings: 10 slices
Ingredients
- 4 Eggs
- 1 1/2 cups Sugar
- 1 tsp Vanilla Essence
- Pinch of Salt
- 2 cups Flour
- 4 tsp Baking Powder
- 1/2 cup Margarine
- 1 cup Milk
Cake Topping
- 1 pkt Instant Pudding
- 2 cups Icing Sugar
- 6 tbsp Margarine
- 1/4 cup Milk
Instructions
- Preheat oven to 180ºC.
- Beat eggs and sugar well.
- Sift flour, baking powder and salt into the eggs.
- Mix.
- Boil margarine and milk.
- Add to the rest of the ingredients.
- Add vanilla.
- Spoon batter into two tins and bake for 30 minutes.
Cake Topping
- Cream the margarine.
- Add sifted icing sugar and instant pudding.
- Add the milk a little bit at a time. (You may not need all the milk).
- Beat well.
- Stand for 2 minutes to stiffen.
