1/2 cup Butter
1/2 cup Sugar
1 Egg
1/4 cup Milk
2 cups Flour
2 tsp Baking Powder
1 cup Apricot Jam

1 Egg
1/4 cup Sugar
1 cup Coconut
Instructions
- Preheat your oven to 180°C.
- Cream 1/2 cup butter and 1/2 cup sugar together, then add 1 egg.
- Add 1/4 cup milk, 2 cups flour, 2 teaspoons baking powder, and a pinch of salt.
- Mix to a soft dough and press into a 22 x 33 cm baking tray.
- Spread 1 cup apricot jam evenly over the dough.
- In a separate bowl, beat 1 egg, 1/4 cup sugar, and 1 cup coconut together until well mixed.
- Spread the coconut mixture over the apricot jam layer.
- Bake for 30–40 minutes until the top is golden brown.
- Cool before slicing into squares or bars.
