
Crunchy Oat Slice Recipe
This Oat Crunchy Slice is chewy, golden and full of toasty coconut goodness. Perfect for a lunchbox snack or a quick afternoon treat.

Ingredients
2 1/2 cups Coconut
1 cup Flour
3 1/2 cups Oats
1 1/2 cups Sugar
1/2 tsp Salt
1 cup Butter or Margarine ((Margarine used for Vegan option))
2 tbls Golden Syrup
2 tsp Baking Soda – dissolved in 1/4 cup Milk ((Almond Milk used for Vegan option))
1 tsp Cinnamon
Instructions
- Preheat your oven to 180°C.
- Mix 2 1/2 cups coconut, 1 cup flour, 3 1/2 cups oats, 1 1/2 cups sugar, 1/2 teaspoon salt, and 1 teaspoon cinnamon in a large bowl.
- Melt 1 cup butter or margarine and 2 tablespoons golden syrup together, then mix into the dry ingredients.
- Add 2 teaspoons baking soda dissolved in 1/4 cup milk (or almond milk for vegan) and stir well.
- Press mixture evenly into a 22 x 33 cm baking tray.
- Bake for about 30 minutes until golden.
- Cut into squares while still hot and lift out once cool.
Hints & Tips
- For extra crunch – Let the slice cool completely before cutting so the edges firm up nicely.
- Boost the flavour – Add a handful of chopped dried apricots or cranberries to the mixture before baking.
- Vegan-friendly – Use margarine and almond milk instead of butter and dairy milk.
