Lemon Loaf Recipe
This refreshing lemon loaf makes you come back for more. It is a favourite in our house and the kids can't get enough of it.

Total Time 1 hour hour 5 minutes minutes
- 1 cup Sugar
- 1/2 cup Margarine
- 2 Eggs
- 1 Lemon rind
- 1 1/2 cup Self-Raising Flour
- 1/4 tsp Salt
- 1/2 cup Milk
Sauce
- 1/2 cup Sugar
- 1 Lemon rind
- 2 Lemons juice
Preheat oven to 180°C.
Beat butter and sugar until creamy.
Add eggs.
Add self-raising flour and salt to butter mixture.
Add lemon rind.
Put dough into a prepared loaf tin and bake for 45-60 minutes.
Prick with a fork and pour sauce over.
