Vegan Chocolate Coconut Slice Recipe

This Chocolate Coconut Slice Recipe is an absolute family favorite in our house. It is topped with chocolate icing and coconut sprinkled over the chocolate for the topping.  It's easy to make and only takes 20 minutes baking time.

Ingredients

  • 1 cup Margarine
  • 1 cup Brown Sugar
  • 1 cup Coconut
  • 1/4 cup Almond Milk
  • 1 cup Oats
  • 2 cups Selfraising Flour
  • 1 tbsp Cocoa

Icing

  • 2 cups Icing Sugar
  • 2 tbsp Cocoa
  • 1 tbsp Margarine
  • 2 tbsp Almond Milk
  • 1 tsp Vanilla Essence

Instructions

  • Preheat oven to 180°C.
  • Cream the sugar and margarine.
  • Add all the dry ingredients.
  • Add the almond milk and mix with a spoon.
  • Press into a greased 40cm x 27cm flat pan.
  • Bake for 20 minutes.
  • Pour icing over as soon as it comes out of the oven. 
  • Let cool and cut into slices.

Icing

  • Mix all the ingredients and spread over slices as soon as they come out of the oven.
