Moroccan Couscous with Chickpeas and Vegetables

This Moroccan Couscous recipe with chickpeas is nicely spiced and is filled with lots of vegetables. This is a healthy dish and great for Vegans as well.

Ingredients

  • 1 1/2 cups Mixed Vegetables
  • 1 Onion chopped
  • 3/4 cup Chickpeas
  • 1 cup Stock
  • 1 cup Water boiling
  • 1 tsp Coriander
  • 2 tbsp Oil
  • 1/2 tsp Turmeric
  • 1 tsp Garlic crushed
  • 8 Cherry Tomatoes halved
  • 1 cup Couscous
  • 1/4 cup Raisins
  • 1 tsp Cumin
  • 1/2 tsp Cinnamon

Instructions

  • Make a stock from the cup of boiling water and the spices. 
  • Add stock and raisins to the couscous. 
  • Mix and stand till all the water is absorbed.
  • Stir fry onion, garlic and mixed vegetables until just soft. 
  • Add cherry tomatoes cook for a few minutes.
  • Add chick peas and warm through.
  • Add couscous and serve.
