Sausage & Chickpea Stew Recipe
This Sausage and Chickpeas stew is hearty and flavorful. The ideal comforting dish for those winter nights. Serve with rice or crusty bread.

- 2 tbsp Oil
- 1 Onion
- 1 tsp Garlic crushed
- 1/2 Yellow Pepper diced
- 4 Sausages spicy, cut into pieces
- 2 cups Potatoes
- 1 tsp Chilli Paste
- 1 can Tomatoes diced
- 1 cup Chicken Stock
- 1/2 can Chickpeas drained
Heat the oil in a large frying pan.
Fry onion and garlic until light brown.
Add the chilli paste and potatoes.
Mix.
Pour the chicken stock and diced tomatoes over the sausage mixture.
Stir through the chickpeas.
Season with salt and pepper.
Cover with a lid and cook over medium heat for 30 minutes or until potatoes are just soft.
Serve.
