Vegan - Brown Rice Rissoto Recipe

This is a delicious flavorsome side dish that is very easy to make. Its a nice change to the normal way of cooking rice.

Servings 6 people


  • 1 Onion
  • 1/2 Green Pepper
  • 1 Tomato
  • 1 cup Brown Rice
  • 4 tbsp Margarine
  • 2 cups Vegetable Stock


  • Chop the onion coarsely. 
  • Dice the tomato.
  • Cut green pepper into strips. 
  • Stir-fry the rice in the margarine over medium heat till it starts to brown. 
  • Add the vegetables and stir-fry until soft. 
  • Add the vegetable stock and stir until well mixed. 
  • Cover with the lid and cook over moderate heat until all the liquid has been absorbed and rice is cooked. 
  • Stir occasionally.
