Vegan - Brown Rice Rissoto Recipe
This is a delicious flavorsome side dish that is very easy to make. Its a nice change to the normal way of cooking rice.
Servings 6 people
- 1 Onion
- 1/2 Green Pepper
- 1 Tomato
- 1 cup Brown Rice
- 4 tbsp Margarine
- 2 cups Vegetable Stock
Chop the onion coarsely.
Dice the tomato.
Cut green pepper into strips.
Stir-fry the rice in the margarine over medium heat till it starts to brown.
Add the vegetables and stir-fry until soft.
Add the vegetable stock and stir until well mixed.
Cover with the lid and cook over moderate heat until all the liquid has been absorbed and rice is cooked.
